Description:
Ingredients: 1 lb Italian sausage, removed from casings
1/2 lb bacon, chopped
1 small onion, chopped
2 cloves garlic, minced
2 cups kale, chopped
1 small head cauliflower, cut into florets
8 cups chicken broth
1 cup heavy cream



How To Prepare: In a large pot, cook bacon and sausage. When nearly browned, add onion, cook until translucent. Add garlic, cook 1-2 minutes. Add broth and cauliflower, bring to gentle boil, simmer 15 min. Add kale, simmer an additional 15 min. Add cream, heat through.
Number of Servings: 8
Carbs per serving - include all nutritional information if known: 6.5 total carbs, 5 net carbs, 17 g protein, 47 g fat * KI = 2.43 using total carb, 2.61 using net carb

Cons: none

Tastes wonderful. I always add hot pepper flakes while cooking the sausage, and I use turnips instead of the cauliflower, turnips taste more like potatoes to me in this soup.

Cons: I overstuff myself

I converted this Olive Garden's recipe for my low-carb lifestyle. The difference between OG's recipe and this one (mine) is I substituted cauliflower instead of potatoes and I use more kale (kale is the closest to perfect a veggie can get ... full of nutrients).


This has been my fave soup recipe for about 6-7 years. I still haven't found one I like better. 1 cup of this is so filling! Unfortunately, it tastes so good I usually end up having at least 2 cups and then feeling too full.
