Description: This can be used as a soup or sauce, it's amazing! Just like normal pumpkin soup with a few things added.
Ingredients: 1 can (large) pumpkin
1 can coconut milk
2 cans chicken broth
1-2 tsp curry powder
1-2 heads crushed garlic
salt and pepper
How To Prepare: Mix everything but the coconut milk in pot. Heat to boiling, then simmer for 15 min or so. Add coconut milk, and heat through while stirring. It's really that easy.
Number of Servings: 8
Carbs per serving - include all nutritional information if known: 5-7, depending on coconut milk (they vary)

Cons: NONE!

This soup is amazing!! I am a huge fan of Thai food but haven't been able to eat it much on this WOE. It's a very hearty soup with great texture. The prep was about 2 minutes, and I didn't even let it simmer more than a few minutes and it was perfect. The recipe also makes quite a lot. This is going to be a staple of my diet!!

I served this at our super bowl party. My dh and I were the only low-carbers there and everyone raved about it and asked for the recipe. This is a keeper.
