Ingredients:

4 tablespoons butter
4 cups thinly sliced onions
2 cups sliced mushrooms
1.5 tablespoons flour
6 cups beef broth (I use ½ chicken ½ beef)
½ teaspoon salt
½ teaspoon black pepper
½ cup brandy
½ teaspoon Kitchen Bouquet seasoning

How To Prepare:

In a 3-quart soup pot melt butter and add onion, stirring constantly.
Cook for 15-20 minutes or until soft, add mushrooms and cook 2 more minutes.
Sprinkle flour over and stir well. (I’ve omitted this a few times and it turns out ok)
Add 2 cups broth. Stir until thickened. Add remaining broth, salt, pepper and brandy.
Cover and simmer 45 minutes. Add kitchen bouquet and stir well.
