Green Goddess Dressing. (Kinda like Caesar dressing, only, it's more greener. )
I saw this recipe in the paper this week and just had to try it!! Oh my gosh it's soo good, it's supposed to just go on romaine but I made it and now I'm thinking of all sorts of things to put it on.. I want to try it on eggs, maybe on some meat or fish... oh and I want some more on another bowl of salad RIGHT NOW...
(Ok, I'm listing the ingredients here because the next section won't let me start new lines.)
1 c. mayonnaise
1 c. sour cream
1/2 c. fresh chives, chopped
1 c. fresh scallions, chopped
1/2 c. fresh tarragon, chopped
1/4 c. fresh parsley, chopped
1 c. fresh basil, chopped
2 cloves garlic, chopped
2 tsp anchovy paste*
salt & pepper to taste*
heavy cream, if needed
Place all ingredients in a blender or food processor and puree until smooth. Adjust thickness by adding heavy cream.
I couldn't get all the herbs fresh. So I got what I could, and for the rest I looked online & used this conversion: 1/2 cup fresh herbs = 8 tablespoons dried. (Also, 8 tbsp = 3tsp.)
It came out pretty thin for me, no way would it need to be thinned down with hc. But maybe that will vary with different brands of sc or mayo?
Also, I cannot imagine adding extra salt. It's already waayy salty! Next time, I'll probably use only 1 1/2 tsp of anchovy paste, instead.
