I came up with this because I love Linguine salad, and had 23 zucchinis on my counter! Very good alternative to the noodle kind!
4 Med. Zucchini
1 onion chopped
1 green pepper diced
8 oz cheddar cheese small cubed
6 oz mozzarella small cubed
5 oz good quality pepperoni stick diced.
1 large bottle italian dressing
salt and pepper to taste
How To Prepare:
Used a julian slicer and slice zucchinis down to the seeds, do not use the seed area or the skins. Italian dressing makes the green skins tough.
Mix all ingredients in a large bowl and toss together so that all "noddles" are coated!
Stir several times so the top part gets coated with dressing.
This is better if it sets over night, makes the noodles bendy and softer, but still firm.
DO NOT COOK NOODLES FIRST OR AFTER IN SETS THE NOODLES BECOME TO SOFT AND NOT AS GOOD!

I am not sure I would guess around 3 net grams per serving. Much lower than reall noodles or even dreamfield pasta!
