I have made this fauxtato salad in larger quantities before and is just as easy. It is easily adjusted to your tastes without adding more carbs to it. It's based on my mother's real potato salad recipe which is a family favorite for every family function where she had to make huge batches. I will add the carb counts of the brand of ingredients I used. I mainly used Kroger Brand.
1/2 Bag of Frozen Cauliflower 7 carbs (not net).
2 Hard Boiled Eggs approx 1.2g.
2 TBS finely chopped onion 2.02.
2 Kosher Dill Pickle Spears (finely chopped)2g.
1 Smallest jar of pimentos (thoroughly drained).
Real Mayo(I used Kraft)Just enough for desired consistancy.
1 pkg splenda.
salt to taste.
How To Prepare:
I cook the cauliflower in the microwave until tender and boil the eggs on the stove.
While they are cooking I chop the onions and pickles, drain the pimentos and put them in a bowl. After draining the cauliflower, I add it to the bowl with the other ingredients, sometimes breaking up the cauliflower into very small chunks, but I sometimes like to leave them in larger pieces. I then chop the egg into bowl leaving some larger pieces because I love the egg taste so sometimes I use more than 2 eggs and adjust my carb count. I use Real Mayo just enough to mix everything together. If you use too much it gets kind of watery. The mayo is a little too sour for me so I will use 1/2 to 1 pkg of splenda. Then salt to taste. It is great after it has been sitting in the fridge a while. Like I said you can adjust it to your taste, if you like it a little more oniony, or more Pickley thats ok just adjust the carbs.
Number of Servings:
This amount makes at least 2-4 servings depending on how much you want to eat.
About 20-30 minutes depending how long it takes to cook the cauliflower to your desired doneness
