Description: Waldorf Salad made with Jicama
Ingredients: 1 Cup chopped jicama (mine weighed 7.8 ounces)
2 small stalks celery, about 4" each, sliced
1/4 C mayonnaise
1 ounce walnuts (about 1/2 a cup of halves)
dash liquid sweetener to taste (just to give the jicama the sweetness of apples)
dash salt
How To Prepare: Mix all ingredients. Chill. Serve
Number of Servings: 2
Carbs per serving - include all nutritional information if known: 14 carbs, 7 fiber = 7 grams net carbs 339 calories
Preparation Time: about 15 minutes
