Ingredients:

**Any vegetables can be added or omitted. Beets make a good addition as they are in traditional greek salads**
1/4 - 1/3 head of iceberg lettuce (core removed)
1 large, firm plum tomato
1/3 cucumber, sliced
1-2oz feta (depending on how much you desire)
1 bell pepper (any color)
2/3 scallion
Olive oil
Vinegar
Oregano

How To Prepare:

On a large cutting board, prechop the tomato, cucumber, scallion and bell pepper into chunks - set aside. (Slice bell pepper in rings and use two rings per salad.)
Chop up the lettuce fairy well and mix in all vegetables. Continue to chop until everything is finely chopped together. The salad should look pulvarized, but trust me, it is good. Add feta and continue chopping. Mix well. When you take a bite, there should be bits of all the vegetables, feta, and lettuce in one bite.
Dressing: Simply sprinkle some oregano on top of salad and dress with a little olive oil and vinegar. Use as much oil and vinegar as desired. Serve with a couple of black olives if you wish.
