If you love garlic, then you'll love this salad!!!!!
1 Pkg crumbled feta cheese
2 roasted red bell peppers (you can buy in a jar)
2 roma tomatoes
1 pkg. fresh basil
1 head of romaine lettuce
4-6 garlic cloves
1/2-1 cup of olive oil
salt and pepper
How To Prepare:
Wash and chop romaine and set aside.
Chop roasted red peppers.
Slice tomatoes how you like them.
Take the above ingredients plus the crumbled feta and put in a large bowl or you can divide them onto two plates.
A food processor comes in really handy for this part but a blender works just as good.
Take basil leaves, stems discarded and the garlic cloves, 2 to start, and put them in the processor. Add olive oil as you blend to get the desired thickness. You can also add more basil and galic cloves as you see fit. Basically make the dressing to your taste. This is a great vegaterian dish. Also, the garlic is very peppery so you might not beed pepper for the dressing but you will need salt. Season to your taste on the salt too.
