This is amazing and filling and so so good on this WOE. To die for.
Baby Spinach (about a serving size if it's just for you..adjust accordingly)
Bacon (about 3 to 4 slices for one)
Balsamic Vinegar (only about a couple of teaspoons, really..you adjust to taste)
Olive Oil (about a tablespoon)
Dijon Mustard (about a small spoonful..adjust to taste)
How To Prepare:
First fry your bacon (low-med heat)
Get your baby spinach out and arrange on plate, bowl, etc.
Once bacon is fried kinda crispy, lay out to drain. Then break up into bacon bits. I like to have them not so small-alittle chunky.
In the pan with the bacon fat, add alittle balsamic vinegar and stir in quickly.
Then add your dijon and then your oil. Stir it up and add to spinach and toss in your bacon bits.
Then you eat it.
