1 package sugar-free lemon gelatin -- 4 serving size
3 each chicken breast halves without skin -- boiled and
6 tablespoons mayonnaise
1/2 cup cheddar cheese -- cubed small
2 stalks celery -- diced
4 each green onions -- chopped
4 cups shredded lettuce
How To Prepare:
Mix chicken, mayo, green onion, celery, and cheese -taste for seasoning and
add salt and pepper.
Mix jell-o powder according to package directions.
Fill bowl or mold with 1/3 the prepared jell-o and put in the freezer for 30
minutes to set. Leave the rest at room temperature so it doesn't set.
Once mix 1/3 of the remaining jell-o with the chicken mixture and layer on
top of the set jell-o. Freeze another 1/2 hour to set then pour the
remaining jell-o on top.
Refrigerate until firm. Slice or spoon and serve on bed of shredded lettuce.
