Ingredients:
|
5 large cucumber --
washed and cleaned, do
not peel.
1 green onion -- use entire
onion including tops
2 quarts mayonnaise
1 cups buttermilk -- (1 to 2)
Juice of 1/2 lemon (fresh)
1/2 teaspoon garlic powder
1/2 teaspoon Onion powder
1 Tablespoon Guar Gum
(for thickening)

How To Prepare:

Wash cucumbers and cut
into thick slices, put through
blender with cleaned
onions cut into 3-4 inch
pieces. Or you can grind the
cucumbers and onions as
for relish. Pour into VERY
large bowl. Add
mayonnaise, mix well. Add
buttermilk and juice of
lemon. Mix well again. Add
spices and Guar Gum, mix
well again. Pour into quart
jars or smaller jars if
desired, put on lids and
refrigerate. This is a
dressing that I made up
from scratch and my family
and friends would stand in
line for it. I made about 4
gallons each summer and
was never at a loss as to
who to give it to. My family
loves it, I had not made it
for several years and when I
did they all were there with
a pint jar "saying me too,
me too." As you can see it is
great for the Atkins diet.
NOTES : Counts for lemon
juice and guar gum not
included in totals.
