Ingredients: 1 large chicken breast --
skinless and boneless,
pounded evenly
2 cups romaine lettuce --
torn or cut
1/4 cup caesar salad
1/4 cup cucumber -- thinly
1 each salt and pepper -- to
How To Prepare: Put chicken breast and 2T
of the dressing in a baggie
and marinate, turning
occasionally, for 1 hour.
Preheat foreman type grill,
grill skillet or bbq grill. Grill
chicken for 6 minutes
(foreman); or 4 minutes
each side. Or until cooked
through but not overcooked.
Sprinkle with salt and
pepper. Cut into thin slices.
Chill 15-30 minutes.
Meanwhile, toss romaine
and cucumbers(if desired)
with remaining 2T dressing.
Serve chicken slices over
