Ingredients: 120g Philadelphia cream cheese
4 medium eggs(55-64g)
1/4 cup grated parmesan cheese
1/4 tsp oregano
1.5 cups grated Mozzarella cheese
Small tub readymade pizza sauce from supermarket (140g approx)
3/4 cup grated Mozzarella cheese
50g Mushrooms
90g Hot or mild Salami
20g olives, pitted and sliced
How To Prepare: Beat cream cheese and eggs till smooth. (I nuke the cream cheese in microwave on high for 40 secs and then use a whisk. Add one egg at a time and whisk so mix does not curdle).
Add Parmesan and oregano.
Spray 9" x 13" baking pan with cooking spray.
Put 1.5 cups of mozzarella cheese in pan and pour egg mixture over. Squish around to mix. Bake at 375 for 30 min. Take out of oven and spread on pizza sauce, layer with salami, mushrooms and olives. (Add finely diced red pepper (capsicum) if desired). Sprinkle with mozzarella.
Return to oven and bake 10 more mins till bubbly and brown.

I found this on another LC site (sorry but cannot remember original poster). One or two portions make a great snack or for super lunch or dinner have 3 portions with tossed green salad.
