These are so yummy! My friend made them for a mexican theme dinner party and I just knew they would fit into a low carb plan even though she didn't intend for them to be low carb.

Ingredients:
|
10 or 12 Whole Fresh Jalapenos
8 oz. of cream cheese
aprox 1 cup of cheddar cheese
2 tsp. of smoky paprika
diced onion

How To Prepare:
|
Cut peppers in half and clean out the veins and seeds. I leave a few peppers with a little bit of the veins and seeds for hubby and son who like them spicer.
Place on greased baking sheet or 9x 13 pan.
Mix softened cream cheese, cheddar, paprika, and diced onion.
stuff peppers with cheese mixture.
Bake in a 350 degree oven for aprox. 15 or 20 minutes till cheese is bubbly and peppers softened a little.
