These came out of my research and many tries of muffins that were too high carb or too involved. We wanted something "bready" that was quick enough to bake anytime.
Great for even induction! I love them with butter and a tiny shmear of sugar free jelly. The flaxmeal does add a little "grit" in them which my teen daughter thinks is gross...
1 c golden flax meal
1/2 t baking soda
1/2 t baking powder
3 packets stevia (or splenda)
1 T coconut oil coconut oil for greasing muffin pans
How To Prepare:
Stir all dry ingredients together. In separate bowl, beat eggs & oil together, then add to the dry ingredients stirring til mixed.
Generously grease the outside nine muffin cups, then put the mixture in them. They will be scant in the tin. Bake at 350 degrees F for 12-14 minutes. Immediately remove from pan and cool on rack.

4 g carb, 3 g fiber
