Description:

I made this to eat as Chix salad. While eating it I realized it would be perfect as a cracker or pork rind topping to make appetizers.
If I were serving at a party, after putting the topping on the "crackers", I would pretty it up with either a: slice of olice, slice of jalapeno (my fave choice), or a small piece of cooked bacon.

Ingredients:

1 grilled chix breast , diced (Tyson's pre-cooked is my choice)
1 jalapeno , seeded and chopped
2 oz. cream cheese
dash salt and pepper, optional
2 slices cooked bacon, crumbled

How To Prepare:
|
Grate the jalepeno in blender. Put in microwave and cook for 1 minute (if you don't like it really hot. Cooking it takes away the "heat"). Next, grate the jalapeno along with all other ingredients in the blender. Voila!
In the future when I get to maintenance, I will just substitute the cream cheese for the 4-cheese blend and put it all in between 2 low-carb tortillas and zap in the microwave. Then top with salsa and sour cream. Yum
