Description: These canape make a wonder bite of flavour and the "canape biscuits" can have any topping you like to give you variety. Each biscuit holds between 1 and 2 teaspoons of topping.
Ingredients: Seafood Topping:
1 teaspoon olive oil
1 teaspoon lemon juice
1 teaspoon snipped fresh chives
1 teaspoon basil
1 teaspoon mint leaves
1 clove garlic, minced
3 oz shrimp, pre-cooked and coarsely chopped
2 oz crabmeat, or mock crab if preferred
1/3 cup plum tomatoes, chopped
3 tablespoons onion, finely chopped


Low Carb Canape Biscuits:
1 tablespoon ground almonds
1/4 teaspoon black pepper
2 cups + 1 tablespoon Atkins baking mix
1 tablespoon baking powder
1 tsp salt
1/4 cup cold shortening
2/3 cup cold whole milk
How To Prepare: There are 2 parts easy to this recipe:


First - Seafood Topping:


- Combine olive oil, lemon juice, chives, basil, mint, and garlic in a mixing bowl. Allow to stand for several minutes.
- Add shrimp, crab, tomatoes, and onion and toss together until all is evenly coated.


Second - Low Carb Canape Biscuits:


- Preheat the oven to 450F [230C].
- Combine ground almonds, pepper and 1 tablespoon baking mix and dust a clean kneading surface with it.
- Sift the remaining dry ingredients together.
- Cut the shortening in using a pastry blender or forks.
- Add milk and mix quickly - do not over mix.
- Knead for a few seconds on the surface - again, don't over do it.
- Pat the dough to a 1/4" thickness and cut into 48 equal pieces.
- Place biscuits on a greased pan with a small space between each. If they are close together, only the tops and bottoms will be crisp but not the sides.
- Bake in oven for 12 minutes.
- Put topping on each biscuit and serve while still warm.
Number of Servings: 48 canapes 12 to 16 servings
Carbs per serving - include all nutritional information if known: 3.5 net for a serving of 4 canapes = 0.88 net gm/canape
