Description: Moist and Chewy with a real cinnamon spice flavor!
Ingredients: DRY
1/2 cup Splenda (approx. 8 Carbs)
4 tsp Sweet N Low Brown Sugar
Pinch of Nutmeg (optional)
½ tsp baking soda
½ tsp salt
½ cup soy flour (7 net Carbs)
½ cup almond flour (6 net Carbs)
2 tbs wheat germ (4 net carbs)
1 cup pecans or walnuts, chopped (3 net carbs)
2 tsp of xanthan gum (important for moisture)


WET
1 stick softened butter
1 egg
2 tsp vanilla extract


RESERVE
1/2 cup Splenda (approx. 8 carbs)
2 Tablespoons cinnamon
How To Prepare: Mix the dry ingredients first. Then add in the wet ingredients. Mix the reserved cinnamon and Splenda together in a separate dish. Form 15-20 dough balls and roll them in the cinnamon and Splenda mix. Press balls into a round shape on a baking sheet and bake at 350 degrees for 10-12 min.


NOTE: I didn\'t count all the slight carbs in the vanilla extract, cinnamon, nutmeg or xanthan gum.
Number of Servings: Makes 15-20 Cookies
Carbs per serving - include all nutritional information if known: For 20 cookies- 1.75 carbs per cookie. For 15 larger cookies- 2.5 carbs per cookie
