1/4 c. Atkins Bake Mix
1/4 c. Finely Grated Cheese -- flavor your choice (2 carbs/quarter cup)
1 egg beaten
2 T. Heavy Cream
Add Water to create thin consistency
How To Prepare:
Place Bake Mix, Cheese, and Beaten egg in a bowl and mix. When blended, add cream. Blend cream into mixture. Add 1 teaspoon of water until the consistency is a thin batter.
ON a medium high stove, grease a medium skillet with either vegatable spray or oil. Pour batter into the skillet, twirling skillet to evenly cover the bottom of the pan in a thin mixture of batter. Place on stove. When the batter appears set on top and is bubbling, flip the crepe. Leave for a few seconds and flip out onto a plate. Fill with your favorite ingredients.
Can wrap well and place in refrigerator and hold for upto 3 days.
Number of Servings:
Make 3 - 4 crepes, depending on size
