Description: salami...
Ingredients: Salami
5 LB Ground Meat pre frozen ( I have used DEER, COW, MOOSE)
5 rounded tsp. Mortons tender salt cure (does not make it salty)
2 3/4 tsp Cracked Pepper or more
2 3/4 tsp Garlic Powder or more
2 3/4 tsp Mustard Seed or more
2 3/4 tsp Onion Powder or more
1 tsp Liquid Smoke or more


Mix all together and refridgerate.


Mix every morning and night for 72 hrs ( I also fry some as small patties like sausage patties to see how the flavor is... then I add more spices if it needs it)


After the 72 hrs
Shape into 2 or 3 loggs. Place on a Broiler pan in a oven set at 150 F
After 4 - 5 hours roll onto the other side. continue cooking for a total of 8 to 12 hours.
Until the Logs look Dry


If it is over 12 hrs thats fine


Time consumming ....not really just looks like it.
I put mine in after dinner...let oven cool down a bit then by bed time I roll them over. Mine are "drying " usually 14 hrs


Great gift for people....not the normal, but I prefure giving homemade things


Awesome on pizza , subs
or just with crackers and cheese


or use the mix for sausage patties
