1 loaf better tasting protein bread -- cut into 1" slices(about 8
2 each tomatoes -- diced small
1/4 cup parsley -- chopped
1/4 cup olive oil -- divided
1 clove garlic -- finely minced
1 each salt and fresh cracked pepper -- to taste
How To Prepare:
Preheat oven to 400f. Spray a cookie sheet with cooking spray and place
bread in a single layer on it. Brush slices w/2T of the oil. Bake for
15 minutes or until it gets slightly dry and toasty looking.
Meanwhile, mix remaining ingredients and toss to blend flavors.
To serve, spoon about 1T of the tomato mixture on each bread slice. You
can drizzle on extra olive oil and red wine vinegar if desired.
NOTES : Counts for protein bread not included in totals.
