2 dozen jalapeno peppers, canned -- whole
4 ounces cream cheese
4 ounces cheddar cheese
1 cup protein powder -- more or less
1 teaspoon salt
1/2 teaspoon pepper
2 each eggs -- beaten
3 tablespoons cream
corn oil for frying
How To Prepare:
Use gloves. Pull the caps off the jalapenos w/o breaking the pepper up(or leave caps on - your preference). Useing a very sharp small knife, cut a slit in each pepper about the entire length. Cut the cream cheese and cheddar each into 12 equal size rectangles. Put a piece into each of the peppers and pinch closed as good as you can. In one bowl, beat the eggs and mix in the cream. In another bowl, mix the protein powder with the seasonings. While heating the corn oil, for skillet frying or deep frying(deep frying works best), dip each pepper into the protein powder, then the egg, then roll in the protein powder, coating well. Fry until golden brown and drain well on paper towels. You can use whatever your favorite cheese(s) are, Monterey jack and mozzarella both work well, too.
