Mary Ellen Creamy Chicken Enchiladas Reviews Date of last review 3 Tue January 27, 2009 Recommended By Average Price Average Rating 100% of reviewers None indicated 8.7 Description: Ingredients: 1 T. Butter 1 onion chopped 4 oz. can chopped green chilies, drained 8 oz. cream cheese, cubed and softened 3 1/2 cups cooked diced chicken breast (about 3) 4 oz. can sliced black olives cilantro sprigs 8 low carb green onion or regular whole wheat tortillas 12 oz. shredded Jack Cheese 2 cups heavy cream How To Prepare: Melt butter in a large skillet over medium heat. Add onion and saute for 5 mins. Add drained green chilies and saute 1 minute more. Stir in cream cheese and chicken. Cook till cheese melts, stirring constantly. Spoon 2-3 T filling into the center of each tortilla. Add a sprig or 2 of cilantro and 1/8th of the black olives. Roll up and place seam side down in a 9x13 inch greased baking dish. Sprinkle with Jack Cheese and drizzle cream over all. Bake in a 350F oven for 45 minutes, till golden brown and bubbly. Let stand 10 minutes to make serving easier. This is excellent! No one would suspect it is low carb. Even if you are not a fan of the low carb tortillas you will love this recipe! Yes | Price you paid?: None indicated | Rating: 9    Positive aspects of the product (pros): YUMMY!! Cons: I need more practice rolling enchiladas!!! This was very tasty (even my picky 7 yr old ate it up, and the 10 yr old had seconds). I made a few substitutions/changes I have to admit: ground turkey for the chicken, Co-Jack cheese, no olives, mild salsa on top when serving, ran out of cream, so used 1/2 and 1/2. But still!!!, a yummy dinner dish that everyone wants again! Thank you!!!

I didn't have any cilantro fresh so I used dried. It worked fine. Non low carbers ate it and raved about how good it was.....I highly recommend this recipe!!!
