I totally made this up. It's my husband's favorite dinner. Top chicken breasts with fresh vegys, spices, and cheese. Totally yum! And low carb!
Four Chicken Breasts
1 chopped mid size zuchinni
1 chopped mid size yellow squash
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 chopped small tomato
Greek Seasoning to taste
Lowfat shredded cheese
How To Prepare:
Place the chicken in a baking pan (on top of foil sprayed with Pam is best for clean up). Mix the vegys together and place a scoop on each chicken breast. Sprinkle on Greek Seasoning to taste. Bake 30 minutes @ 350. Top with cheese and put back in the oven for about five minutes or until the cheese has melted.
