This is a wonderful rich, creamy chicken dish that I have been making for years before even doing the LC diet. It just happened to work out perfectly that it is very low carb.

Ingredients:
|
4 Boneless Skinless Chicken Breasts
1/4 - 1/2 Cup - Cooking Sherry
Lemon Pepper Seasoning to taste
1 Cup - Heavy whipping cream
1 Tablespoon - Lemon Juice (ReaLemon brand is 0 Carbs)
1/4 Cup - Italian Cheese Blend

How To Prepare:
|
Cut chicken breasts into small cubed pieces (about and inch to 2 inches in size)
Heat 1/4 cup of cooping sherry on medium high heat
Saute chicken in sherry until chicken is fully cooked
Once chicken is cooked, add heavy whipping cream, lemon juice, and lemon pepper seasoning
Reduce heat to low and let simmer until sauce thickens
Add cheese to mixture and let it melt into the sauce
NOW EAT AND ENJOY
