Boneless, skinless chicken thighs wrapped around Italian Cheeses and Sausage.
2 pounds Boneless, Skinless Chicken Thighs
Italian Seasonings (Trader Joe's Pasta Seasoning Blend or Oregano, Basil, etc.)
Salt and Pepper to Taste
1 cup Mozzarella/Provolone Blend or other Italian Cheese Blend
2 Links Italian Sausage (Check labels for Zero Carb.)
Fresh Baby Spinach or Arugula
How To Prepare:
Preheat oven to 350.
Spread open the chicken thighs. Sprinkle both sides with seasoning and pepper. Salt cautiously because sausage may be salty.
Sprinkle a small amount of the cheese blend on the indside of the chicken thigh.
Slice open the raw sausage and pull off a small piece. Press it against the chicken. It should be a bit thinner than the chicken. Don't over stuff.
After you're layered each thigh with cheese and sausage roll up the thigh, making sure to tuck one end in. Secure each thigh with one or two toothpicks. Boneless, skinless thighs tend to vary in size so some may need up to three toothpicks to close.
In a large skillet, sear the thighs for 4 minutes then turn and sear another four minutes. If your skillet is oven proof transfer into the oven. If not put the thighs in a baking dish or cookie sheet and finish baking, 15 to 20 minutes depending on the size of the thighs.
Remove toothpicks. Slice carefully and serve over spinach or arugula.
