Description: A low carb version of an old classic. Chicken, Pepperoni, spinach and cheese lasagna without pasta.
Ingredients: Boneless Skinless Chicken Thighs-6 pieces
Sliced Pepperoni-to taste (I used about 2/3 pkg)
Fresh Baby Spinach-2 pkgs
Roma Tomatoes-6
Purple Onions-1/2 lg
Garlic-3 cloves chopped
Italian seasoning-to taste
Salt-to taste (I use Tony's creole seasoning)
Butter-2 tbsp
Parmesan Cheese-1 cup
Provolone Cheese-6 slices
Fresh mushrooms- 1 sm pkg
How To Prepare: Season Chicken with Italian seasoning and salt to taste.
Saute Chicken, onions, mushrooms, and garlic till chicken is done.
Add tomatoes and cook until most of the liquid is evaporated out.
Remove the chicken from the pan and then add the spinach.
Cook the spinach until it is done and most of the liquid is evaporated out.
Turn off heat and add the parmesan cheese.
In a baking dish line the bottom with Pepperoni (this will make a kind of crust)
Add the spinach and vegetable mixture.
Add the chicken and cover the whole dish with the Provolone cheese.
Bake in 350 degree oven for 30-40 minutes.
Remove from oven and allow to stand for 15-20 minutes before serving.
