Description: Spicy Chicken Salad

Green Chiles are local in New Mexico. I make Sweet hot green chiles from them by peeling the roasted green chiles putting a sandwich bag of them in a bowl: heat in the microwave 1/2 cup rice vinegar to 1 cup splenda pour over chiles and refrigerate. They are good for many applications.
Ingredients: 1 Chicken cooked de-boned bite size pieces
1/2 cup celery chopped
3/4 of a bunch green onion
2 TBS sweet hot green chiles
1 red bell pepper chopped
4 jalapeno green olives chopped
1 green apple cut in chunkes with skin (optional)

Sauce: easy and can be used for almost any salad.
1 sml sour cream
2 heaping TBS mayonnaise
1 TBS rice vinegar
1 1/2 Tbs splenda
Salt and pepper
How To Prepare: Put all ingredients in a bowl as instructed then add the sauce if you like it with more sauce add more. Refrigerate and serve over lettice leaves.
