1 Chicken breast, beat until flat1/4 c spinach1/8 c low fat feta1/4 c diced tomatoes, fresh or canned
How To Prepare:
Brown just the outside of chicken, season if desired. Mix spinach and feta together and place on half of the chicken. Fold the chicken over and secure with 1 or 2 toothpicks. Top with tomatoes and bake covered for 30 min or until done.
