A delicious LC recipe you can use as a crepe filling OR a hot dip served with pork rinds and celery to scoop with.
1-1/2 c cubed cooked chicken
1-4 oz. can green chilies
3/4 c grated sharp cheddar cheese
1/4 c mayonaise mixed with 1 tbsp vinegar and 1.2 tsp sweetener
1/4 c finely chopped onion
cherry tomatoes and parsley to garnish if desired
How To Prepare:
Combine chicken, chilies, cheese, mayo mixture, and onion until mixed. Spoon into crepes,roll and bake in 350 degree oven until warmed through. Garnish with 1/2 cherry tomato and a sprig of parsley. Or place mixture in oven-safe casserole dish and broil under broiler until hot and bubbly. Scoop up with pork rinds and celery sticks! An easy and VERY yummy snack!
