According to everyone's likes or dislikes you may add more onion & green chili or reduce it. The same with the cheese, you can either have a cheesy casserole or not to0 cheesy.
1 whole chicken (either boiled or roasted)
1 Tbsp. Olive Oil
4 oz. diced green chili (fresh or frozen)
1/3 cup of diced onion
1 can of Old El Paso green chili sauce
8 to 10 Tostada chips
Meunster Cheese (tastes best) or Mild Cheddar (shredded)
salt / pepper to taste
How To Prepare:
Warm oven to 350 degrees.
Have shredded chicken ready.
Warm up the Olive oil in a 1"deep-pan. Next, sautÃ¨ both green chili and onion. Mix them up until onion is translucent. Add Old El Paso green Chili sauce. Cook for about 2 minutes.
Next add shredded chicken and warm for about 5 minutes.
Use Pam cooking spray on a seperate casserole dish. Layer a few tostadas on dish (you may opt not to add tostadas at all for an even lower carb dish). Layer chicken and shredded cheese. You may top the casserole with more Green Chili sauce. Place in oven about 30 minutes.
