Flatten chicken breasts w/mallet between 2 pieces of wax paper. Season w/salt & pepper. Put chicken in casserole dish and top with goat cheese, fresh or dried basil and 1 or 2 minced sun-dried tomatoes. The key here is to bake it at a fairly low temp. like 300 for a longer time, like 45 minutes or until done, that way, it is most tender.
My husband thought this was one of the best chicken dishes I've ever made!
