2 tablespoons olive oil
4 boneless skinless chicken breast -- (4 to 6)
12 ounces sliced mushrooms
4 cloves garlic -- minced
2 tablespoons butter
1/4 cup chicken broth
2 bags baby spinach
red pepper flakes
How To Prepare:
Heat oil in a large skillet over high heat. Add chicken and brown for a few minutes. Reduce heat to medium and add garlic and mushrooms. Cook for a few more minutes. Add butter, parsley, chicken stock and spinach. Cook over low heat until chicken is done and spinach is wilted. Add red pepper flakes to taste.
NOTES : Counts for baby spinach not included in totals.
