In a bowl, beat one egg. On a plate, mix parmesan cheese and Italian seasonings. Dip chicken breasts in egg and coat with parmesan cheese mixture. Fry in oil until brown.
Place browned chicken in a baking dish. Pour about 1/2 can of tomato sauce over the chicken (I used tomato sauce that had Italian seasonings in it and only had 3 carbs per 1/4 cup; 21 carbs for entire can). Place provolone cheese on top of sauce. Cover with foil and bake at 400 for 30 minutes.
Remove foil and bake for another 10 minutes or until cheese is browned.
