4 chicken breasts -- no skin
1 1/2 cups Atkins bake mix
seasonings to taste such as:
How To Prepare:
Combine Atkins' baking mix with the seasonings of your Choice and set aside. Then in separate bowl beat egg with a fork. Dip the chicken breasts first in the egg then in the Atkins batter. Do this cycle once or twice (depends if you like crispy chicken or not) Set up a frying pan with Canola oil about 2 cups of oil enough to cover the breasts half way. With it on Medium heat lay the battered chicken breasts in the oil frying them until done. Then cover with a canned marinara sauce.
