4 each chicken breast halves without skin -- skinless, boneless
1/2 cup atkins bake mix
3/4 cup water
2 tablespoons tabasco sauce
1 teaspoon creole seasoning -- to taste
1 large egg -- beaten slightly
How To Prepare:
Heat oil for deep frying to 400 degrees. Cut breasts into desired nugget size. Mix bake mix, tabasco, seasoning and egg -then add water to make a thick batter (you want it to stick to the meat but not run off fast).
Put all chicken into batter and toss well with your hands. Fry (in batches if necessary) until golden brown -usually about 5 minutes. Drain and serve with desired sauce - sour cream, mustard mixed w/artificial sweetener for a 'honey mustard' flavor, low carb BBQ sauce, etc.
This is also great sliced on romaine lettuce for a Cajun Caesar salad. This does make quite a bit of chicken nuggets -up to 40 depending on the desired size.
