1 1/2 cups pork rinds -- crushed fine
3 egg whites
1/3 cup heavy cream
1 tablespoon red hot sauce
How To Prepare:
A few hours before you want to cook the chicken, rinse it well, pat dry and rub it with paprika, salt and pepper. Heat oil, about 1/2 quart over medium heat, when oil reaches 370 F it is ready for frying, don't go over 370. Whisk egg whites with heavy cream and Red Hot Sauce (if desired). Dip the chicken first in the egg/cream mixture then the pork skins, using tongs, coat the chicken well. Fry the chicken 10min. each side, I turned it several times, when done place immediately on paper towels and salt and pepper, than do the next batch. When through, you can filter the oil through a coffee filter, refrigerate and use a second time.
NOTES : Carbs for paprka and red hot sauce not included in total - adjust accordingly
