2 chicken breast -- or thigh boneless -- cut into bite sized pieces
2 eggs -- beaten
1 tablespoon mustard -- yellow or spicy
a couple dashes hot sauce
1 1/2 cup pork rinds -- crushed
1/4 cup parmesan cheese
1 teaspoon paprika
How To Prepare:
Beat together the egg, mustard, hot sauce. Mix together the pork rinds, cheese, and paprika. Dip the chicken chunks in the egg mixture and then coat in the pork rind mixture. Place on a cookie a sheet, drizzle with some melted butter and bake at 375 for about 15-20 minutes. So tasty that you don't need a dipping sauce!
