Put the chicken in a baking pan. Top each with a slice of cream cheese, a pile of Mexican cheese and a slice of bacon (I cut the bacon in half so it looks like two pieces -- fits better). Bake in a 350-degree oven for 30-40 minutes (depends on how thick the breasts are). Once the chicken is done, switch the oven to broil and broil until the bacon is cooked and the cheese is all melted. Serve with sauce to dip in.
Sauce: Ranch dressing Taco sauce (has less carbs than most salsas but you can use salsa instead). Mix a four to one ratio of ranch dressing to taco sauce and use a medium taco sauce. Mix yours depending on the level of spiciness you want.
I got this recipe from iVillage low carb recipe archives. It is soooooooo good! The person who originally posted it says that she got it from a bag of Tyson chicken. I vary the recipe by adding a can of chilli peppers (from the Mexican section of the supermarket) after I have added the cream cheese and just before the Mexican cheese, and I also sprinkle garlic powder and pepper and cumin on the chicken.
