Ingredients
2/3 cup finely chopped celery
1/3 cup chopped onion
2 TB butter
1.5 tsp Grillmates Chicken Rub
1/4 tsp garlic salt
3/4 of a recipe of flaxseed focaccia bread, cubed
2/3 cup chicken broth or bouillon
1 large egg, slightly beaten
1/2 cup chopped pecans

How To Prepare:
|
1. Saute' vegetables in butter over medium heat. Mix together spices and add to vegetables when tender. 2. Blend together chicken broth and lightly beaten egg. 3. Place dried bread cubes in a large bowl. Add seasoned vegetables and then drizzle with broth/egg mixture, tossing lightly until thoroughly coated. 4. Using your hands, make 12 slightly compact stuffing balls and place in muffin tin that has been greased with cooking spray. 5. Bake at 350° for 12-15 minutes until tops are crispy. 6. Alternately, put mixture into a 9x9 cake pan and bake at 350° for 30 minutes (20 minutes covered with foil, 10 minutes uncovered to brown.)
