Great for parties - a big hit evey time I take it in to work! Perfect for any stage of Atkins.
8 oz. blue cheese (danish, roka, gorgonzola), crumbled
8 oz. Cream Cheese, softened
2 oz. (1/2 stick) unsalted butter, softened
4-6 slices bacon
How To Prepare:
Be sure to soften everything well - I leave mine out on the counter for at least 2 hours. Mix butter and cheeses, then form into your desired shape - either a log or a ball. I do this by placeing in plastic wrap and either rolling it up and twisiting the ends (log) or gathering the wrap up into a topknot and twisting the whole thing together (ball).
Place in refrigerator and cool for at least 2 hours or overnight.
Cook bacon very crispy. I bake mine at 375.
When bacon is cool, chop fine. Roll cheese ball or log in bacon bits and serve with veggies or pork rinds.
