Description:

This is the ultimate comfort food. Makes for a great pot-luck or Thanksgiving/Christmas item (Non low-carbers will never know the difference!) If you want even lower carbs, eliminate the bread crumbs and use parmesan instead. (But the breadcrumbs make a delicious difference!)

Ingredients:
|
1 box of Dreamfields elbow macaroni
2 or 3 cups sharp cheddar (regular can be used too)
Additional 1 cup cheddar or 1/2 cup parmesan for top
3/4 cup heavy cream
2 Tablespoons Vital Wheat Gluten
1/2 teaspoon xanthan gum
2 cups of water
1/4 cup of Butter (room temperature)
1 Tablespoon mustard
1 1/2 teaspoons Worcestershire sauce
2 low-carb pieces of bread in food processor or blender to make breadcrumbs (My bread is 4 net carbs per slice)
1 teaspoon Garlic powder
1 teaspoon Seasoned salt

How To Prepare:

Start cooking macaroni (follow directions on package.)
In a large bowl mix together, cheese, cream, butter, mustard, garlic powder, seasoning and Worcestershire sauce.
In another bowl, blend together vital wheat gluten, xanthan gum and 2 cups of water. Let sit for a couple of minutes, then mix into cheese mixture.
When pasta is done, cool under cold running water and drain.
Mix cheese mixture with the pasta and pour into a 9x13 glass baking dish.
Sprinkle breadcrumbs and additional cheddar or parmesan over top. You can also sprinkle a bit more seasoning salt and garlic powder on top.
Bake in a 375 degree preheated oven for approximately 30 minutes or until cheese is melted and top is lightly browned.
Serve immediatley or freeze single portions for a quick lunch.
