6-8 oz grated chedder cheese
20 oz canned tomatoes - drained
1 medium onion - diced
1 tbsp crushed garlic (or to taste)
1 tsp oregano
salt & pepper to taste
bacon or sausage (optional)
How To Prepare:
Pre-heat oven to 400 F.
Fry the garlic and onions in a large frying pan on medium heat until the onion turns opaque. Add the tomatoes and cook for 1/2 hour, stirring occasionally, or until very pulpy. Pour into the bottom of a shallow 9" x 13" cake pan. Make 8 divits in the sauce with a spoon and then crack the eggs into the divits. Add salt and pepper if desired. Cover the dish with the cheese and bake for 25 - 30 minutes. Serve with bacon or sausage on the side.
