This is a very easy recipe, contains almost no carbs and it's just delicious. A perfect breakfast!
1 medium sized onion
Red pepper (paprica), 1/4 to 1/2 will be enough
Tomato paste, 3-4 tablespoons
Salt and pepper
Oil Oopsies (a kind of bread baked with philadelphia - recipe is to be found in the forum) or any kind of low carb bread you like.
How To Prepare:
Finely chop onion and red pepper into small pieces and put them in a pan with about 2 tbsp of rape-seed oil. Cook until soft.
Add the tomato paste and let it get warmed up. Add the eggs, pepper and salt, and stir. When the eggs are almost dry, but still a bit squishy, it's done! It should be squishy/soggy in the consistency because you are going to eat it with bread (of course low carb). When done, tear small pieces of bread and use it to scoop up the egg mixture. Sooo good for breakfast! :-)
