This a great thing to make enough ahead of time for the entire week. I separate enough into small one serving bowls & just grab one from the fridge & eat it on the way to work.
9 hard boiled eggs, diced
10-12 strips crisp bacon, diced (I bake mine in a pyrex cake pan at 350 for 30-40 minutes, 2 x's during the baking I'll take the pan out of the oven & pour out the grease to make them crispier) 1/3 c. canola mayo (Spectrum Organics - no GMO's or trans fats)
1/4 c. mustard
these are guesstimates as I don't ever measure but i'm pretty good at guesstimating. 3-5 avocados
How To Prepare:
Mix together and dollop a couple of tablespoons on top of 1 or 2 avocado halves.

Carbs per serving - include all nutritional information if known:
very low, depending on how many avocado halves used
with boiling eggs & frying bacon - about 45 min to 1 hour, but not continously working

Avocado and bacon are two of my absolute favorite things to eat! This recipe is so yummy!! I could eat this everyday.
