Enjoy the 4,000+ Low Carb Recipes!!!
I've been on and off on Low Carb Diet for awhile and the biggest problem for me is variety...
SO this time I decided to experiment a lot... and these pancakes are the first thing I feel I've made that actually turned out how I expected =P
3 Large Eggs
3oz Cream Cheese (I used Philadelphia Regular)
1/2 cup Ground Pork Rinds
1TBsp Oil (I use Omega Smart Balance)
1/4 cup Whey Vanilla Protein (lowest carb possible)
1/4 cup WATER
1tsp SPLENDA (or other sweetener)
How To Prepare:
1.) Put eggs in bowl and mix well
2.) Put Cream cheese in Microwave for 40 seconds to soften. (then mix in with eggs well)
3.) Mix in Pork Rinds, Oil, Whey Vanilla Protein Powder, Water, and Splenda...
4.) After mixing well let stand for 2 minutes....
5.) Cook on Skillet like any regular pancake.
Now this makes about 4 nice sized pancakes that taste good enough that you don't even need syrup... but i still use Walden Farms 0 calorie syrup....
I did test putting this in the fridge and using the next morning and it worked great (not sure how long ingrediants will keep fridge though)
Hope you enjoy ....
