I made this recipe when I was in a hurry. I eat in on the bus or in the car on the way to work. It makes 10 mini egg cakes at about 100 calories a piece. I eat 2-3 in the morning for breakfast. It is also great for a snack.
10 eggs (yolk optional. I use whites only)
10 drops sweetzfree or splenda equivalent
3 Tablespoons of Peanut Butter
3/4 cup cheese (I used cheddar)
2-3 Tablespoons of cocoa powder
How To Prepare:
Put everything in blender and blend. Pour into large baking pan and bake at 350 for about 20 minutes. Cut into 10 serings. Cool and put in fridge. Makes 10 egg breakfast or snack servings.
