This tastes great! Use fresh grated parmesan instead of the stuff in the shaker!

Ingredients:
|
4 Tbs Olive Oil
6 Scallions, Sliced
9 Oz Package of fresh spinach
6 Large Eggs
4 Tbs fresh herbs (I used cilantro)
1/2 Cup Parmesan Cheese, divided into two 1/4 Cup
Salt
Pepper

How To Prepare:
|
Heat broiler to about 500.
Heat skillet and olive oil over meduim heat. Add scallions and cook for 2 minutes.
Add spinach to skillet and cook until it's wilted.
Beat eggs in large bowl & season to taste with salt & pepper.
Using a slotted spoon, transfer the spinach/onion mix to the bowl of eggs. Stir in the herbs and 1/4 cup of Parmesan & mix everything well.
Remove any crusty bits of scallion from skillet, but leave the oil. Pour egg/spinach mixture in skillet and cook for about 6-7 minutes or until the bottom is cooked.
Sprinkle the remaining 1/4 cup of parmesan over top, then place under broiler until top is golden brown and excess liquid is set.
(I just put the skillet in the oven, right under the broiler with the handle stickng out of the open door and watch it)
Let stand 5 minutes before serving
