Description: This very simple recipe has been passed down through my Italian family for years. We make it Easter morning and slice and eat it throughout the day... It is more like a breadless quiche, but we normally eat this room temperature or cold.
Ingredients: 7 large eggs
3/4 cup grated Romano cheese(I use Locatelli)
3/4 cup fried Italian Hot Sausage(or meat of choice)
1/2 teaspoon Basil


You do NOT need Salt...You can use sweet sausage, veal, ground beef etc...instead of the hot sausage.
How To Prepare: First, fry up your sausage, allow to cool then cut in small pieces. Measure and set aside 3/4 cup sausage pieces.


Whip eggs with electric mixer then add cheese and basil, mix again.


Dump sausage pieces in small non-stick frying pan (at least 1.5" deep)Add egg-cheese mixture and over medium heat stir constantly with a small spatula making sure to get the bottom and sides until the mixture gets goopy looking and you start seeing pieces of cooked eggs. Make sure your sausage is evenly distributed, then stop stirring and leave cooking until set.


Take a second small frying pan(preferably the same kind)place upside down on top of the other frying pan. Grasp both handles(carefully)quickly, completely flip egg cake into the second pan. Do not try to flip with a Spatula. Cover and cook maybe another 5 mins or so to ensure doneness. Take a plate, lay flat on top of pan and flip onto plate. This is actually a lot easier then what it sounds!


Allow to cool before refridgerating(or eat warm) slice and eat...This freezes well too.
Number of Servings: Depends on how you slice it.
